Harvest

The harvest begins early in March for white stocks and in the middle of April for the red ones, this way a perfect balance between sugar, scents and tannins is obtained There are two ways of harvest: by hand in some sectors, specially white stocks and premium red grapes, and mechanically in other quarters, specially night mechanical harvest to take advantage of low temperature in order to macerate musts and marcs prior to fermentation.
