Merlot Reserva
The Merlot grapevines from High Maipo Valley are located just by the Andes Mountains, their soil is of alluvial and calcareous origin. Merlot stocks are ungrafted (planted without the use of graft holders), they are 10 years old.
The handling begins with the pruning and continues all over the growing season, leaves and buds weeding and clearing of grape clusters are intended to improve quality, concentrating the grapes components, thus expressing their maximum potential or "terroir".
The harvest of Merlot begins in the middle of March, when balance of sugar, scent and tannins ripeness is perfect. Harvest is nocturnal. Once grapes arrive to the winery, they are stemmed and crushed and put in stainless steel tanks where they are macerated during 5 days at low temperature (< 59º F). Then they are inoculated with selected yeasts to obtain alcoholic fermentation, at temperatures between 78 - 82º F. Then the process continues with Malolactic fermentation in 225 litres casks. The aging in French oak casks lasts about 6 - 8 months. Afterwards, wines are stabilized and bottled. The wine is kept 5 to 6 months bottled before marketing.
