Merlot Varietal
The Merlot grapevines from High Maipo Valley are located just by the AndesMountains on alluvial , calcareous soil.
Merlot plants are ungrafted and 10 years old.The handling starts with the pruning and continues all along the growing season, leaves and buds weeding and unloading of the grape clusters are intended to enhance the quality,concentrating the components of the grapes , thus expressing its best potential or terroir.
We start the harvest of Merlot in the middle of March when a perfect balance between aroma, sugar and ripeness of the tannins is achieved.It's harvested at night. Once the grapes arrive they are stemmed and crushed and set in stainless steel casks for 5 days at low temperature. Then they are inoculated with selected yeasts for their alcoholic fermentation at 78 to 82· F, then kept in stainless steel casks to preserve itheir aromatic qualities.Finally they are treated and bottled during the season. They rest in bottles for over 4 months before marketing.
