Cabernet Sauvignon Reserva
A choice of our best Cabernet Sauvigon grapes are selected for our Reserve elaboration. Yielding decreases allowing colour, tannins and scent concentration The handling of the vines is friendly to nature.The harvest of our Cabernet Reserve begins in the middle of April, when balance between sugar (potential alcohol) and phenols is reached. Grapes are selected and then stemmed, cooled and crushed in the winery, to be then poured in stainless steel tanks. Before fermentation, musts and skins are macerated at low temperature, extracting colour and scents without alcohol. Then fermentation begins at temperatures between 79 to 82º F on a daily racking programme designed by our enologist.
Bruising takes place after fermentation and then taken out of the vats. Malolactic fermentation is spontaneous.
Wines are stored in French oak casks for about 8 to 10 months. Then they are bottled and stored again a few months before marketing.

| Olfactory analysis | In their fragrances fragrances are criss-crossed varietales and woods. They dominate fragrances to red fruits with something of menthol, that is joined perfectly with notes to tostado. |
| Taste Analysis | In mouth is smooth and pleasant. Silky it covers well all the spaces of the mouth. It leaves sensations that recall the coffee, bitter chocolate and tostado. |
