Cabernet Sauvignon Gran Reserva
Cabernet Sauvigon grapevines are ungrafted and conducted as espaliers. They are 12 years old and handled with a vegetative restriction concept, in favour of the fruit production in a microclimate characterized by a great day and night thermal difference (69º F) and high radiation, achieving low yielding (grapes Kg/plant) in order to concentrate components: scents, colour, and phenols, thus getting more structured and bodied wines.
The harvest begins in the middle of April when perfect sugar, scents and tannins ripeness is attained. Grape is crushed and stemmed in the winery, adding some 2 mg/l of sulphur dioxide in the reception hopper. Musts and marcs are poured into 5.000 l stainless steel casks, where it takes place a 5 days cold maceration at 50º F, before fermentation, to extract scents and colour. Then, musts are inoculated with selected yeasts to ferment at 82 - 88º F for a 7 to 10 days period. 4 daily 1 minute/metric ton toppings are performed to extract all of the colour and tannins from the grapes.
Then wines are poured into first use French oak casks, where malolactic fermentation takes place. Those wines stay in the casks for about 10 months. In that period they gain in wood and structure and they micro oxygenate. The vineyard enologist tastes them daily to define optimal time of removal and end of the cask aging period. (About 10 months). Then, wine is bottled in the same winery and rests for about 4 to 6 months before marketing.
