Cabernet Sauvignon Varietal
The "terroir" of Huelquen (climate, soil and water) stands out in the growing, ripeness and quality of Cabernet Sauvigon stocks.
Our grapevines planted in 1992 are ungrafted and conducted as espalier and irrigated by leakage. They are handled without the use of pesticides or inorganic fertilizers.
Our concept of wine making is one of balance among environment (native flora and fauna) , growing and vital cycles of our grapevines.
The harvest begins in the middle of April when optimal ripeness and perfect balance between sugar (potential alcohol) and phenols is achieved.
The mechanical harvest is carried out during the night and so the grapes clusters arrive cold to the winery. They are stemmed , crushed and poured into stainless steel tanks where they are bruised for a few days. So scent and colour are extracted without alcohol. Then fermentation takes place at temperatures of about 78º - 82º F with a daily racking regime determined by our enologist. Maceration takes place after fermentation and then the grapes are taken out of the vat . Malolactic fermentation is spontaneous.Our wines thus finished are naturally clarified and bottled at the end of the season, in order to preserve their varietals scent. They are sold some months after.
